Step 1: Measure out 1 cup of okonomiyaki flour. If you don't have any, use regular flour plus 1/4 teaspoon baking powder and a pinch of salt, and add 1 tsp. dashi powder dissolved in the water in step 3.

Step 2: Add one beaten egg.

Step 3: Add half a cup of water.

Step 4: Mix well!

Step 5: Add 150g of "shredded cabbage". This is the lazy way, but it works fine.

Step 6: Add in some little cooked shrimp. We keep a bag of them in the freezer for just this kind of occasion.

Step 7: Chop 2 green onions and mix in most of it, including the white bits. Save a handful of green bits for later.

Step 8: Mix up the batter and make two pancakes on your medium-high preheated griddle. Cook the first side until nicely brown.

Step 9: While you're browning the first side, put a chopped slice of bacon on top of each pancake.

Step 10: Using two spatulas (not one, not three), flip the okonomiyaki over and cook the other side.

Step 11: Present delicious browned pancake to discerning diner.

Step 12: The condiments are critical. You need: katsuobushi (dried bonito flakes), okonomi sauce, Kewpie mayonnaise (not American mayo), and ao nori (dried seaweed flakes).
First, sprinkle on the saved green onion slices. Then add the ao nori, and finally the katsuobushi. This is the exciting part (let's see if I can get this video to work):Finally, add mayonnaise and okonomi sauce in a pretty pattern.

Step 13: Eat!

Let us know if you give it a try. It's really yummy!

Thanks, guys! This is awesome. We'll be giving it a try ASAP.
Awesome. Hopefully you'll be able to find all the stuff. Let us know if you need us to send you some seaweed in the mail or something...
What happens if you don't use the condiments? Does it explode in your stomach or something?
No, it's just not nearly as tasty. And you wouldn't want to miss out on the proper experience, would you?
Oh, boy!!!!! It even has a video!!!! This rocks. Thank you! Once we get over these cold (so we can taste) we'll try it out.
